Cinnamon quick bread

I love, love, love this recipe! It freezes really well, too!

Cinnamon Swirl Quick Bread

2 cups all purpose flour

¾ cup sugar

4 teaspoons baking powder

2 teaspoons ground cinnamon

¾ teaspoon salt

1 cup buttermilk

¼ cup canola oil

2 egg whites

1 egg

2 teaspoons vanilla

Streusel: 2 tablespoons sugar, 1 teaspoon cinnamon, 2 teaspoons softened margarine/butter

Preheat oven to 350. Coat a 5x9 loaf pan with cooking spray. To make the batter: in a large bowl, mix the flour, sugar, baking powder, cinnamon, and salt. Add the buttermilk, oil, egg whites, egg, and vanilla. Beat with an electric mixer on medium speed for 3 minutes. Pour the batter into the prepared pan. To make the streusel: In a small bowl, mix the sugar, cinnamon, and margarine until crumbly. Sprinkle over the batter and swirl slightly with a knife to marble it through the batter. Bake for 55 minutes or until a skewer inserted in the center comes out clean. Cool for 10 minutes in the pan on a wire rack, then remove from the pan to finish cooling.
