Goat Cheese and Roasted Red Pepper Quesadilla

These make a great light entree! Or, cut them into wedges and use as an appetizer.

Goat Cheese and Roasted Red Pepper Quesadilla

1 small jar roasted red peppers, drained

4 oz goat cheese

10 small tortillas (or 6 larger tortillas)

Spread goat cheese onto tortillas and top with roasted red peppers. Top with another tortilla. Grill quesadillas 1 or 2 minutes until grill marks appear and filling is hot. Cut into wedges and serve warm.
