Roast Beef Salad with Goat Cheese and Balsamic Vinegar
2 small heads Boston lettuce, torn into pieces
12 oz sliced deli roast beef
2 large beefsteak tomato, cut into wedges
½ red onion
4 oz soft goat cheese, crumbled
¼ cup olive oil
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
kosher salt and pepper
Divide the lettuce, roast beef, tomato, onion, and goat cheese among bowls.
In a small bowl, whisk together oil, vinegar, mustard, salt and pepper; drizzle over salad.
