Spinach Tortilla Wraps
serves 4
4 spinach tortilla wraps
1 can black beans, rinsed and drained
1 can corn, drained
1 avocado, cut into 1/2 inch pieces
1/4 mild tomato salsa, plus extra for serving
1/4 cup chopped cilantro
1 teaspoon kosher salt
1 cup Monterey Jack cheese
Mix beans, corn, avocado, salsa, cilantro, and salt. Lay tortillas flat and line middles with bean mixture. Top with cheese. Fold sides of wrap in, then roll from bottom to top. Serve with extra salsa.
