Goat Cheese Torte

This yummy appetizer is easy to make but VERY impressive!

Goat Cheese Torte

8 oz cream cheese, softened

4 oz goat cheese, softened

3 Tablespoons unsalted butter, softened

1 clove garlic, crushed

1/3 cup pine nuts, toasted

½ cup pesto

½ cup sun dried tomatoes, chopped

In a bowl, combine cream cheese, goat cheese, butter, and garlic with electric mixer. Line a small bowl with plastic wrap. Place 1/3 cheese mixture in the center of the plastic-lined bowl. Spread ½ pesto over cheese. Sprinkle with ½ pine nuts and tomatoes. Repeat layers, ending with cheese. Cover with plastic wrap and keep refrigerated until serving (can be made several days in advance). To serve, unwrap and invert the bowl onto your serving platter. Serve with assorted crackers.
